Sorry for the late reply. I think that oil with less bitterness is instead of truffle oil. I do n’t think it ’s particularly good for extra virgin olive oils that have a pungent or bitter taste. Simply, nice quality butter is also good. Thanks

Thank you for your comment Rock salt was only used when roasting. potato Fresh cream butter Sea salt Please combine the above ingredients as you like. Very simple but delicious.
I particularly like using the blender, or a robot coop, instead of passing on i just scoop the potato mash into the robot, add room temp milk and cold butter, blend until silk smooth. Just like my old idol M.P. White.

Olive oil is bitter I'd suggest sunflower oil

Replace with something real. Buy truffles, make your own without all the chemical and very low quality (if any truffle)
You can use nutmeg, it's way cheaper than truffle oil

Yes. You can use boiled potatoes. please try to reduce fresh cream a bit because boiled potatoes have some water.
