Potato Purée Beautiful texture, melts in your mouth

    RECIPE
    Put washed potatoes on rock salt than bake then with oven for 90 minutes with 220℃.
    Place skins on upper and purée them like “Push” not “Pull” in order not to make them too sticky
    Put potatoes into a pot
    Add 200 g fresh cream, 10 g butter, 2 g sea salt.
    Mix well until it boil and make it smooth. Add truffle oil as you like.

      Sorry for the late reply. I think that oil with less bitterness is instead of truffle oil. I do n’t think it ’s particularly good for extra virgin olive oils that have a pungent or bitter taste. Simply, nice quality butter is also good. Thanks

      Replace with something real. Buy truffles, make your own without all the chemical and very low quality (if any truffle)

      You can use nutmeg, it's way cheaper than truffle oil

      It goes well with anything, but I cook it for a hot meal. Good matching with sauteed scallops and shrimp butter sauce:)

      Yes. You can use boiled potatoes. please try to reduce fresh cream a bit because boiled potatoes have some water.

    Hi, can you tell me the comparison between each ingredients?? Cause from what i see, the main ingredients are the vegie, cream and rock salt. Thank you

      Rock salt was only used when roasting.
      potato
      Fresh cream
      butter
      Sea salt
      Please combine the above ingredients as you like. Very simple but delicious.

      I think they are similar. In my opinion, puree has a smoother texture than mashed potato. Thanks

      It's not a typo. Take the time to roast, depending on the size of the potato.

    why can't we use the blender like carrot puree?

      This is because using a blender makes the potato sticky and disappears with my favorite texture.

      I particularly like using the blender, or a robot coop, instead of passing on i just scoop the potato mash into the robot, add room temp milk and cold butter, blend until silk smooth. Just like my old idol M.P. White.

      Sorry for the late reply. I think you can, When I making with sweet potato, wet the surface of sweet potato with water, roll up foil and roast.
